The secret behind their starter culture is that it changes the microbiological makeup of the fermentation to both encourage good flavor and discourage the negative flavor elements, creating complex metabolites that when roasted provide a wonderful aroma and taste in each cup. After an extended fermentation of two to three times normal fermentation, producers wash and dry the coffee to create a sweet and fruity aroma and flavor.

This selection comes from the Sampieri de Tomatlancillo, Zilmor, & Altas Montañas farm in the Huatusco region of Veracruz. For this special lot, the single estate producer uses fresh coffee cherries from the Zilli and Sampieri families and carefully pulps them before adding their unique starter culture to a fermentation tank.
